ADVENTURE-APPROVED BOLOGNESE WITH OFF-PISTE PROVISIONS SMOKEY BACON TOPPERS

Serves 4

INGREDIENTS

1 tbsp olive oil
1 onion, grated
1 carrot, grated
4 cloves garlic, minced
2 tsp dried oregano
2 tins/ 800g cooked brown lentils
2 tbsp tomato paste
150 ml red wine (optional)
2 tins/ 800g chopped tomatoes
2 tsp Worcestershire sauce
1 tsp Marmite or miso paste
4 tbsp plant milk
pinch salt and black pepper
300 g dried spaghetti
1/4 cup Off-Piste Provisions Smokey Bacon Toppers
Fresh basil to serve

     

    METHOD

    1.) Heat the oil in a large non-stick pan over medium heat.

    2.) Add the grated carrot and onion, giving them a good stir. Next, add the minced garlic, dried oregano, and a pinch of salt and pepper. Sweat the vegetables off, stirring regularly for about 2 minutes until they reach a soft, almost paste-like consistency, without any browning.

    3.) Create a well in the centre of the pan by pushing the veggies to the sides. Add the cooked brown lentils to the well and fry them for 2 minutes.

    4.) Make another well and add the tomato paste. Stir it for 30 seconds, allowing the paste to cook off slightly, before combining it with the rest of the ingredients.

    5.) If you're feeling bold, add the red wine. Let it simmer for a couple of minutes to enhance the depth of flavours. Then, introduce the chopped tomatoes, Worcestershire sauce, and Marmite or miso paste. Stir everything together and bring it to a simmer.

    6.) Meanwhile, cook your pasta in salted boiling water, following the instructions on the packet.

    7.) Simmer the Bolognese sauce for 5-6 minutes, allowing it to take on a darker, richer colour.

    8.) Add the plant milk, stirring it through the sauce to make it rich and silky.

    9.) Finally, it's time to introduce the Off-Piste Provisions Smokey Bacon Toppers. Sprinkle them into the sauce and stir, letting their irresistible smokey essence mingle with the other flavours.
