VEGGIE RICE PAPER BITES WITH OFF-PISTE PROVISIONS SWEET & HOT TOPPERS
12 medium rice paper sheets
Vegetable cooking oil
200g mushrooms, chopped into small pieces
1 TBSP ginger, grated
2 large garlic cloves, grated or minced
100g carrots, grated
100g cabbage, shredded
1 tsp coconut sugar
1 TBSP soy sauce
1 TBSP sesame oil
1/2 TBSP rice wine vinegar
White pepper to taste
1/4 cup of Off-Piste Provisions Sweet & Hot Toppers (or other flavour of choice)
2 spring onions, chopped
Dipping sauce options: hoisin sauce, dumpling soy sauce, spicy laoganma, Chinese black vinegar
1.) On medium heat, fry mushroom in a bit of oil until cooked through and most water has evaporated. Set aside.
2.) Fry up ginger and garlic until fragrant - about 1 min. Add in carrots and cabbage. Keep cooking for a couple of more minutes until lightly cooked. Add the rest of the seasonings: coconut sugar, soy sauce, sesame oil, rice vinegar and white pepper to taste.
3.) Finally add in your Off-Piste Provisions Sweet & Hot Toppers.
4.) In a bowl of warm-hot water, soak a rice paper sheet until it becomes soft and malleable. Lay flat on a chopping board or plate. Add two heaped tablespoons of veggie filling in the centre of paper sheet. Wrap by folding all four sides into a rectangular or square shape (see video). Wrap again in a second sheet of rice paper.
5.) In a greased pan on medium to high heat, sear the wraps on each side, approx 5min until crispy (make sure they don’t touch one another as they will otherwise stick). Remove excess oil by wrapping for a couple of seconds in a kitchen paper towel.
6.) Garnish with spring onions, sesame seeds and more Off-Piste Provisions Toppers!
Serve with preferred sauce, hoisin, laoganma, soy sauce and/or black vinegar.
