The perfect comfort food to warm you up on those cold rainy days. A cozy indulgence of creamy mushroom pasta amped up with Off-Piste Provisions Smokey Bacon Toppers.

Makes approximately 2 portions

Your favourite pasta*
1 large shallot, minced
2 garlic cloves, minced
Olive oil for frying
200g brown mushrooms, sliced
1/2 cup coconut cream
1/2 teaspoon brown sugar
1/2 teaspoon vegetable broth powder
1 teaspoon nutritional yeast
Cracked pepper and salt to taste
1/4 cup (or more…) of Off Piste-Provisions Smokey Bacon Toppers  

Optional to serve: thyme, oregano or your favourite herb

1.) In some olive oil, fry the shallot on medium heat until brown and fragrant 2-3 min. Add garlic for an extra minute. Set aside.

2.) Fry up the mushrooms until most of the water has evaporated and mushrooms have become brown and slightly charred.

3.) Turn down heat a little before adding coconut cream with a dash of water to thin. Season with remaining ingredients: brown sugar, vegetable broth powder, nutritional yeast, salt and cracked black pepper. Keep stirring for a couple of minutes, while adding water if needed to keep desired consistency.

4.) Cook pasta as per packet directions and mix into the sauce. Add Off-Piste Provisions Smokey Bacon Toppers. Serve with fresh thyme, oregano or your favourite herb.
