These Smokey Cauliflower Tacos mean business, with that bold smokey kick, while Original Toppers deliver that gritty crunch. Makes approximately 8 tacos

Main ingredients:

1/2 large head of cauliflower, cut into small, bite-sized florets.
Large shallot or 1/4 red onion, cut into slivers
1/2 red bell pepper, diced
Handful of fresh lettuce
1/3 cup Off-Piste Provisions Original Toppers or Smokey Bacon Toppers
8 Corn tortillas



2 TBSP olive oil
1 TBSP lemon juice
1 tsp ground cumin
1/2 tsp sweet paprika
1/4 tsp smoked paprika
1/4 tsp coriander
1/2 tsp sugar
Salt & pepper to taste


Yoghurt Sauce:

1/3 cup vegan yoghurt
1 TBSP lemon juice
1/2 tsp maple syrup
1 tsp nutritional yeast
Pinch of salt



1.)In a bowl, combine all the marinade ingredients. Cook shallots / onion until fragrant, 2-3 minutes. Set aside

2.) In a greased pot or pan, start by searing the cauliflower on high heat until nicely browned / charred on the outside. Lower heat and add the marinade mix as well as shallots/onions to cauliflower. Cook further until the cauliflower is tender or slightly al dente. Adjust seasoning as needed.

3.) Mix together yoghurt sauce ingredients with a little whisk until well combined.

4.) Heat tacos in a lightly greased pan. Dress the tacos with the lettuce, cauliflower, bell peppers, Off-Piste Provisions Original Toppers and yoghurt sauce. Garnish with your preferred ingredients, such as toasted pumpkin seeds, smoked tabasco, a squeeze of fresh lemon juice and chopped coriander.
